Designed to resemble the Shelton Signature at high altitudes, the Aviation Blend is ideal for brewing in aircraft cabins. Since cabins are pressurized to 8,000 feet, water boils at 196°F instead of 212°F. A lower boiling point weakens desirable acidity, under-extracts the essential oils, which contribute to the beautiful flavors and aromas, and over-extracts the bitter alkaloids, resulting in a weak and bitter coffee.
On top of that, our palate’s ability to register taste hampers inflight coffee flavor. Our taste buds have a significantly reduced sensitivity to sweet and increased sensitivity to bitter. Additionally, up to 80% of what we think is taste, is actually smell. We need evaporating nasal mucus to smell, but in the parched cabin air our odor receptors do not work properly, resulting in dull and flavorless coffee. It’s obvious why inflight coffee gets such bad press.
Through the careful selection of beans which extract properly at a lower boiling point (which took over two years to find and develop) and a proprietary roasting process, we successfully engineered The Aviation Blend, designed to counter-act the negative effects. The result is a powerful and perfectly balanced blend that positively shines at 30,000 feet.
